Joomla/Dedicated Server Setup & Optimization

Hi folks,
Just had my established Joomla 1.5.22 site (www.ei-resource.org) moved to a dedicated server running linux (CentOS5) with WHM/cPanel. I am completely out of my depth so need some help getting settings right. Would also like server optimized for my Joomla site.
1. I am having DNS issues. Online tools keep reporting 'inconsistent glue' and associated nameserver issues for my domain e.g.:
http://dnscheck.pingdom.com/?domain=ei-resource.org
http://www.intodns.com/ei-resource.org
I also keep receiving an autogenerated warning email from cPanel telling me that /etc/hosts and /etc/resolv.conf and the A record in the zone file for the domain may be incorrectly configured.
I need someone who knows what they are doing to set all this up correctly.
2. I also need the DNS resolvers for the server changing to new ones specified by my host.
3. I would like someone who has a lot of experience with Joomla to optimize the server settings for both performance and security. After checking YSlow (score currently 68/D for homepage) I want to set expires headers and ETags (I checked the modules are loaded in Apache but I can't get .htaccess code to work). I would also like GZip to be looked at. It seems ther Joomla GZip is working somewhat by I have heard that server-side mod_deflate will be much faster given the server resources available. Other optimizations such as PHP memory settings I would also like looking at and anything else you know about that I with my very limited knowledge do not!

I need the problem diagnosed and a temporary fix for the server to get it running so that I can start working on re-coding the PHP script.
This job is for server diagnosis and to get the site to load, not for fixing the PHP script. You will get root access, but I ask that you check with me first before making any changes because I want to know what the problem is and what fix is being done.
