Need Expert Linux Sysadmin to create a usable image of server and mount and format a new drive on the server

Hello,
I would like you to create an image of my server, which I can backup locally and to another web host so just in case I have a drive failure, I will be able to restore the system to it's current configuration and not have to re-secure and re-setup the server again. I will try to remove all unnecessary backups and files currently on the server so that the image can be small. I have had my server thoroughly secured.. but I'd like someone who is also a security expert who can take a quick look to make sure everything is okay before we make an image of the configuration. I was told that I needed to be careful about making images of my server while it's live, because the only way to do it is by using "dump", and it can be off with mounted file systems. (I might not be able to get a useable image..) The server might need to get LVM installed or something. I hear the dump method can be used, but NOTHING can be running on the system that would alter the filesystem, so i need to make sure all out of kernel processes are stopped, and all that should be seen is the ssh server and bash. Please let me know about the best way to do this to get a USABLE image.
Secondly, i have a secondary drive that has some missing sectors, and is about to fail. I have WHM/Cpanel installed on the server, and I have this drive mounted on /backups , which is where WHM saves account backups. I am in the process of replacing the drive. I don't really need to save the backups on their now, but I would like to get the new drive installed in the box, and have you mount and format it properly back to /backups. I also have a custom MYSQL backup script that saves all of the databases for one of my cpanel accounts every 12 hours, and it retains for backups at a time, and automatically deletes the oldest one as time goes along. I still have the script on the box, it will not need to be re-setup as a cron job, I would just like you to be able to re-run the script on this secondary drive once it's formatted and mounted.
Please let me know if you are a mail server expert as well.. as far as possibly setting up the proper domain keys etc to send mail from the server without it being marked as spam from hotmal/yahoo etc. (I already have domain keys setup I believe)
Please have some type of messenger (AIM/MSN/YAHOO), and having skype for audio chat is a huge plus. Please be fluent in English, and give me reasonable pricing. I have a long time relationship with all of my service providers, and will leave you excellent remarks once the job is complete. I am looking for someone that I can use from now on for ALL my Linux sysadmin related work.. As long as you are reliable all of my further business will go to you. (including a big upcoming project I am working on)
